Rigatoni with snow peas and sauce

A simple recipe that I made the other day at lunch, as they were advanced from the night before the snow peas. And since nothing is better (for me) a nice plate of pasta in the vegetable kingdom.



INGREDIENTS: snow peas 5-6

rigatoni
head

peeled onion oil

dry ricotta

Clean snow peas popping up at the ends and removing the wire. Blanch for a few minutes in salted water and drain. In a sauté pan with olive oil and onion, then add the snow peas and a tablespoon of peeled. Adjust salt and cook about 15 minutes. Apart from cooking the rigatoni al dente drain and pour in the sauce. Sauté for a few minutes and Serve. Serve grated cheese after a good dry. Bon appetit!

PUMPKIN DAY: Risotto cake and pumpkin pie bread


Yesterday was Halloween, so I play around with the pumpkin. It is not a party I like very much because here in Italy is not felt, and then there's the right atmosphere. Frankly, after seeing in Anglo children begin to draw witches and pumpkins a month before Halloween and waiting anxiously for that day to carve the pumpkin and put inside the candle, dress up and go around the houses in the neighborhood to ask sweets ... I personally go to a Halloween party in Milan it seems to me something very sad! But the pumpkin is a pumpkin, and thus this tradition should be maintained at least! I like very much (of course ... it is sweet!) LittleDrag and obviously not very (too sweet!), but yesterday he just liked the two dishes I have prepared, and then be allowed to publish:)

Risotto with pumpkin (x 2)

INGREDIENTS:

150-200g rice 200g pumpkin

vegetable broth onion


butter parmesan marsala


Cook the pumpkin in broth (I put a potato, carrot and onion) until it is soft. At this point, remove from broth and mash well with a fork on a plate.
In another pot cook the onion with a little 'butter, add rice and toast it. Then spray with Marsala (I used this summer to buy a. .. Marsala!), let it evaporate and then add some 'vegetable broth. Halfway through cooking add the pumpkin and then continue to cook the rice adding from time to time the stock and stirring constantly.
When cooked stir in a knob of butter and Parmesan.
Unfortunately I forgot to take the photograph, but will make it soon because it'll just make sure to be quick!

This recipe I found in the blog but the Dolcetto public anyway because I liked the result very much (I only say that we have already made half out!) and already two people have asked me the recipe.

INGREDIENTS:


50g melted butter 200g sugar 2 eggs

3 tablespoons vegetable oil ½ cup milk


350g flour 400g pumpkin (cooked and mashed) 1 teaspoon cinnamon

100g chocolate chips

50g ground almonds 1 tablespoon baking

Start by mixing melted butter with sugar and then add all other ingredients in the above order, stirring well.
Bake at 170 degrees for 50 minutes (I used the silicone mold) around.
It 's really a delight.



The two plates are come well because the gourd was really good. I always try to choose well (the color must be intense), but not always successful. My grandmother is the proof: it cuts a piece and says that if you go to the pumpkin bottom is good (it is ripe at the right point), if it floats ... be thrown! In short, the bread was edible, but in the end I decided that we could also save ... A few days later I told the story to my uncle and he told me, why do not you make the cake of bread? Lighting! Well I tried, and as a first experiment I'm really satisfied! Of course the next time I will make some changes and added (macaroons and pine nuts), but the cake was good! Given the sudden decision, I only used the ingredients I had at home. Here they are:



INGREDIENTS 300 grams of bread (preferably stale or old)
3 / 4 l milk
a pinch of salt 1 egg

1 lemon (juice and zest)

sugar 3 tablespoons cocoa
half a glass of grappa
150 grams of raisins soaked in sugar water




Place the bread pieces in a bowl with milk. Let stand for 3-4 hours until the bread has absorbed all the milk. After further crumble the bread with a fork and add all other ingredients. Once mixed pour the entire mixture into a baking dish and bake at 200 ° C for one hour. When the cake is cooked, remove from oven and when cool, sprinkle with icing sugar.
It keeps best in refrigerator.
It 's a different taste than usual, but for this very tasty!

I had an idea! Because I love the pies, I thought I'd post some, As preparations. I like them because there is no recipe, you can open the fridge, choose 3-4 ingredients are combined well with each other, unite them, bake and voila! And then one day after I did not prepare anything for lunch ... I just have to warm up a slice and eat it!

INGREDIENTS:

This is a pretty simple recipe but in recent days I have been asked by anyone! Saturday I made a mountain of muffins for the small party of Gaia and I would say that his friends have appreciated since they are all gone! Then yesterday the Faby told me that he intends to begin turning out muffins ... and asked me the recipe for "basic". And here it is.

INGREDIENTS: (20-25 muffins)


200 g sugar 2 eggs 1 cup of yogurt

Here! Yes, yes we are still just that since we got back from vacation we were diving from work and taken from thousands of commitments we were waiting at the gate .. just punishment for being away almost 4 weeks! Really, it was just a nightmare return to the usual routine of Milan .. for more during the holiday we ate a lot and so I did not really want to talk, think or write about food! And last but not least ... The digital camera is broken! On vacation I even bought two machines and disposable, I was not convinced that they still existed! In short, a conspiracy against the Blog!
But at the end of August, my sister came to visit us in Irpinia and was presented with a box of cookies made with colored his hands ... and then I could dedicate a post with you and your cookies? I can not appreciate his various trials and experiments in the kitchen?
Here they are:



INGREDIENTS:

400 g flour 100 ml milk


150 g butter 250 g sugar 2 eggs + 1 yolk

grated rind of one lemon 1 packet of

yeast 1 packet of powdered sugar colored sprinkles


Combine flour, sugar and yeast in a bowl. Make the fountain in the center and put the milk, melted butter (do not fry and put it cold or at least warm), eggs and lemon zest. Mix and pour over the pastry. If the dough is too soft and remains stuck to the hands to add a little 'flour. Make a strip pasta more or less than 1 cm, 5 cm wide and as long as you want. To form the cookies using stencils or a knife, a fantasy. Arrange on baking sheet covered with parchment paper and brush with beaten egg. Finally sprinkle with icing sugar and colored sprinkles.

Sunday also has devoured my little sister, but it has twenty years .. : P I think today is trying to play it, indeed, I am quite certain this morning because he called me from the supermarket to ask doses and ingredients! (Mely await news on the outcome!)



INGREDIENTS: 300 gr

flour 2 eggs 200 g sugar

1 cup of yogurt (mine was at Chantilly)
1 jar (the empty yogurt) seed oil
a little milk

cocoa 1 tablespoon baking

Working eggs with sugar. Then add the yogurt, oil, yeast and flour. Mix well and spread half the dough into the mold for plum. Add the other half of the dough
2:00 to 3:00 tablespoons of cocoa and a splash of milk (or oil, or both) to soften a bit '(especially if you overdo with cocoa, as I did! I'm just saying when you lift the lid of the pot to the cake is "intoxicated" by a scent of chocolate TOO !!!!!).

When I was a little more prepared with her grandmother, I do not know how many days I spent in doing strips, stellline or hearts to decorate cakes ... even when I was in high school was preparing the cake more often, and nobody had ever explained that the pastry should not be warm, you should not touch with hands, the butter should be so or what ... In short, when they started to give me one thousand tips for preparing the perfect crust .. my pies have started coming evil! Too hard or too crumble ... : (So I stopped doing them, although sometimes, when I ate some amazing pie prepared by friends or acquaintances, we try again! The result is that on my notebook now I have the recipe pastry for Liz, the Faby, of MammaDrag, Italian Cuisine ... help!
Last week, for birthday LittleDrag, I decided to try again. I did a mix of all the recipes and the result was ... perfect! This was the pastry that I wanted!



INGREDIENTS:


150 g butter 100 g sugar 2 egg


1 egg 300 g flour

a pinch of salt 1 / 2 tablespoon baking
1 jar of jam strawberries (made by MammaDrag)

First I cut the butter into pieces and then I worked a bit 'with his fingers and a bit' with a fork. Then I added the sugar, eggs and salt. I mixed all with a fork and then I added the yeast and flour. I quickly mixed with cold hands, I created a ball, I wrapped in plastic wrap and put in fridge for an hour.
Once ready, I laid 2 / 3 of the dough with a rolling pin to create the bottom of the tart. With the rest I made the strips to be put on the cake. I must say the strawberry jam MammaDrag has made a major contribution to the success of the cake, it was delicious!
Bake for 40 minutes at 180 degrees.
This is another one of those cakes that simple, especially when the jam is good for me to beat all cakes and creamy superfarcite!

April 30 was my last day at work, and of course I took office a treat to share with my colleagues. Often they were my "guinea pigs", and have bravely tasted, usually on Monday, all my experiments sweets! I know a bit 'to miss my sweets, and I miss them so much: (
few months ago I read a book on bread alone, where there were lots of recipes for breads and cakes with bananas, so I was just felt like trying to combine something like that ... I found this recipe
Blog Dolcetto, and I tried, with excellent results! The plum is delicious, because it will also I love the whole wheat flour, but really I (we) loved it!

INGREDIENTS:


300 g wheat flour 180 g sugar 2 eggs

2 tablespoons of yogurt (mine was natural white)

3 tablespoons milk 1 / 2 glass of vegetable oil 3 ripe bananas
(mine were tiny but maybe that's okay because the plum came not too sweet or too many bananas!)
1 teaspoon grappa (the next time I try to Strega liqueur)
1 pinch nutmeg 1 tablespoon baking

Working
eggs with sugar until mixture is soft and clear. Combine yogurt, milk, oil, brandy and walnuts nutmeg and mix well. Stir in the mashed bananas with a fork. Finally, add the flour sifted with baking powder and mix.
Fill with this mixture for a plum cake mold and bake at 170 degrees for about 40 minutes until golden brown.
Start your day with a cake that will give you a nice boost of energy!
